2 Medium Carrots
1/4 cup Almond or Sesame Milk
1 tsp Ginger (finely chopped)
1/4 fresh lemon (just the juice)
2-4 drops Stevia or 1 tablespoon of coconut sugar, or maple syrup (optional)
Pinch cayenne pepper
Water (until you get desired consistency)
Put all ingredients in a high speed blender and mix well. Add some purified water or carrot juice if the consistency is too thick. Warm in a saucepan, or add warm water when adjusting consistency to heat. Do not overheat or the soup will take on a slightly bitter taste.
This soup is a recipe taken from a source that advocates the raw diet, which is part of the reason why the soup is only warmed and not boiled. The raw diet is followed by many who are looking to be healthier, lose weight, or to detox or cleanse their body. Although we do not follow a raw diet, we really enjoy this soup! It also make an excellent dip for raw veggies if you mix in less water and serve cold. Enjoy!
