Kale for ……dessert? We were a bit wary when we read the recipe. A bit wary when the kale was baking, and honestly a bit wary as we took our first few bites. We quickly discovered that we had nothing to worry about! This is easily one of our new favourite recipes. We can’t wait to make it again! A sweet twist on traditional kale chips. We had planned on sharing some with friends, but we polished them off so quickly! We’ll share the next batch…maybe.
4 Tbsp raw sugar
1 large egg white
1/2 cup sweetened shredded coconut
1/4 cup unsweetened cacao nibs
4 cups of packed kale, torn with stems removed (try to make the pieces approximately the same size)
Preheat the oven to 300°F and cover with parchment paper. In a large bowl, combine the sugar and egg white. Using a whisk or mixer, beat the sugar into the egg until frothy, about 1 minute. Mix the kale into the egg and sugar mixture until the kale pieces are covered. Add the coconut and cacao nibs and toss until the kale is thoroughly coated. Spread the kale evenly over a parchment lined baking sheet. Bake for 10-12 minutes, or until the kale just barely starts to brown.
