Roasted Butternut Squash and Quinoa Pilaf

A bit of a twist on a traditional pilaf. Squash is good for you and in season! This recipe is a little mild, but garlicky and delicious! While traditional pilaf uses rice as the main grain, substituting quinoa adds extra protein and vitamins to increase the health benefits.

Serves 8 as a side dish, 2-3 as a meal


4 cups peeled and cubed butternut squash
5 cloves garlic, minced
2 tsp garlic powder
1/4 tsp crushed red pepper
1/4 cup slivered almonds
5 tsp olive oil
2 cups cooked quinoa
1 Tbsp snipped fresh sage
1/2 tsp salt
Fresh sage for garnish – optional

Preheat oven to 425°F.

In a large bowl combine butternut squash, garlic, garlic powder, almonds, and crushed red pepper.  Drizzle with oil.  Stir until the squash is evenly coated.  Spoon into a 15x10x1-inch baking pan.  Roast 30 minutes, stirring once halfway through cooking.
Into the cooked quinoa, stir salt and snipped sage. Spoon quinoa mixture over butternut squash, mix well and serve.
If desired, garnish with sage leaves.
