Santa doesn’t need a sugar crash on the busiest night of the year. Give him some delicious kale cookies to keep his energy up all night. These cookies are kid approved, and will definitely get you on the nice list.
1 1/2 cups flour (white or whole wheat)
2/3 cup old fashioned oats
2 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1/2 cup firmly packed torn kale leaves
1 cup firmly packed light brown sugar
1/2 cup unsalted butter, softened
1 Tbsp fancy molasses
2 large eggs
1 Tbsp vanilla extract
1 cup milk chocolate chips
Preheat the oven to 350°F. Line 2 baking sheets with parchment paper, set aside.
Place the flour, oats, baking powder, baking soda and salt in a large bowl and mix well. Set aside.
Place the kale in a food processor and process until fine.
In a bowl cream together kale, brown sugar and butter. Add molasses, eggs, and vanilla. Combine until just incorporated.
Add dry ingredients and mix. Add chocolate chips and stir.
Drop tablespoon sized dollops of batter onto lined or greased baking sheets.
Bake for 12-14 minutes.
Cool on wire racks.
