For our final vegan recipe we decided to pull out one of our favourite side dishes, courtesy of our family. It’s one of our go to winter feel good comfort foods that we never realized was vegan. This dish has a mild flavour to compliment anything you’re serving, and is an excellent healthy replacement for mashed potatoes at big family meals such as Christmas, Thanksgiving or Easter dinner! We promise if you have this, you won’t even miss the mashed potatoes!
1 large carrot
1 large parsnip
1 tsp brown sugar
Salt and pepper to taste
Butter or earth balance to taste (optional)
In a large pot bring water to a boil (enough water to completely cover carrot and parsnip). Chop carrots and parsnip into chunks about 2 inches in size. Place in boiling water. Boil until carrot and parsnips are tender when tested with a fork – about 12 minutes. Drain. Mash. Mix in brown sugar, salt and pepper and butter if using (could also replace with earth balance). Enjoy!
