Spicy Chicken Avocado Burger

I feel that all I really need to say is that we tried this recipe out earlier in the week to test out its deliciousness and take some nice pictures, but they turned out to be SO amazingly yummy that we are making them again as we are posting this blog!!

But okay, I will talk a little bit more! If we ever ordered a hamburger in a restaurant, it was so covered in condiments and extras that the taste of the actual patty was completely lost. We realized after we started our healthy lifestyle change and cutting out unhealthy extras like most condiments and excessive amounts of extras like cheese that neither one of us really likes the actual flavour of ground beef. As even lean ground beef still contains quite a bit of fat, we decided to try this recipe out instead and voila! An instant success! This burger is a flavourful and healthy alternative to a standard hamburger. Eating a patty on its own is delcious, but adding just a touch of lime juice and salsa on top and it becomes a masterpiece!

Healthy chicken avocado burger

Recipe

1 lb extra lean ground chicken
1 avocado, cut into small chunks
1/2 cup regular oats (not quick oats)
1 lime, zested then juiced
1/4 to 1/2 cup (depending on personal taste) fresh cilantro, chopped
1 and 1/2 Tbsp cracked chili peppers
1 tsp garlic powder

In a large mixing bowl, toss avocado chunks in oats to coat. Add lime zest, cilantro, cracked chili peppers, garlic powder, and lime juice (we hold some lime juice back to sprinkle over each burger before eating – delicious!). Mix well without squishing the avocado chunks. Blend ground chicken into mixture, again being careful not to completely mush the avocado. Shape into patties and grill to an internal temperature of 165°F (we use a small George Foreman grill, it takes about 10 minutes).

Makes 6 patties.
