This chicken sure packs a punch. The bright and zesty flavours are sure to liven up your meal. We decided to make this recipe as a way to use up all our extra cilantro, after making our Chicken Avocado Burgers. These two recipes have turned the cilantro, lime, crushed red pepper flavour combination into a staple in our kitchen. Give it a try!
4 boneless skinless chicken breasts
1/2 cup lime juice
1/2 cup olive oil
1/2 cup fresh cilantro
3 Tbsp minced fresh garlic
2 Tbsp crushed red pepper
1 tsp salt
1 tsp pepper
Tenderize chicken breasts or puncture several times with a fork. Combine all other ingredients in a Ziploc bag or large bowl. Add chicken, marinate overnight or for at least 5 hours.
Preheat oven to 350 degrees F. Place chicken in glass baking dish. Bake for 40-45 minutes or until cooked through and juices run clear.
