Fresh Rolls

It’s date night! But that doesn’t mean that the clean eating habits have to go out the window. We have been eating really clean lately, cooking every night, trying to be healthy and creative, but it isn’t always easy. Especially when stress levels, sugar cravings, and the summer temperatures start rising. Fresh rolls are an awesome way to break out of the cycle of summer salads, try them onย a night when it’s too hot to think about firing up the oven. They’re easy to make, and you can use any veggies you have left in your fridge. Fresh rolls are so much fun to eat, and whether it is with a date, or a group of friends, finger food is always a favourite. Oh and did I mention, they are so healthy!!

Healthy raw fresh rolls

We put together a few plates of fruits and veggies that we had leftover from various salads and recipes. Your filling choices are unlimited though! Use any fruits or veggies you like to eat.

Fresh rolls for date night

Ingredients in our fresh rolls included:

Matchstick carrots
Raw kale
Baby spinach
Quinoa (you can also use rice)
Avocado
Red pepper
Orange pepper
Mango
Green beans
Cucumber

For dips and spreads we had:
Soy sauce
Hummus
Kale pesto
Fresh lime juice
and a few of our favourite salad dressings

The only other thing you need is rice paper to wrap your fruits and veggies in.

Fresh rolls

To make the fresh rolls dip your rice paper in warm water, flip it to wet both sides. Cover it with your fillings, and wrap it up. The rice paper gets sticky and stretchy and acts like a translucent tortilla.

The possibilities are endless! We found the avocado-lime-mango combination especially delectable, but next we definitely want to try adding in some crisp apple and celery. Some other fillings that you could try are:
Leftover stirfry for hot option
Leftover cooked meats or shrimp
Tofu
TVP
