Frittata

Frittatas are a great way to start your weekend! Its a perfect way to make use of those last veggies in your crisper. It is also healthy, easy to make, and great for sharing!

You will need a cast iron skillet or another type of pan that can move from stove top to oven.

How to:
Chop up your veggies! Our frittatas usually include peppers, two or three handfuls of kale, shallots, sweet or green onions, a stalk or two of celery, and occasionally some turkey or ham.

Sautee and spice the veggies until they are softened. We sometimes add a bit of Balsamic vinegar at this point. Remove veggies from heat. If desired, sprinkle with a bit of shredded cheese. In a bowl or measuring cup whisk together four eggs, then pour over sautéed veggies in skillet.

Move entire skillet into an oven preheated to 350°F. Bake for 7 to 10 minutes, or until eggs have reached desire consistency. Slice and enjoy! Makes for a great post-run meal!
