While we do our best to stick to clean eating as much as we can, we find it easy to slip into unhealthy snacking habits during the winter months. Instead of enjoying the fresh fruits and veggies more readily available during the summer, we find ourselves reaching for high calorie snacks like chips in the winter. Instead, Lan had a great idea for a new healthy and super-delicious new snack! Making this recipe is quick and easy, and in addition to being a very satisfying snack, it fills your whole house with delicious smells! The nuts provide a warm flavour profile in addition to some protein. The maple syrup gives you a hint of sweetness to quell any cravings, and the coffee and cacao gives a great energy boost.
1 Tbsp finely ground coffee
1 tsp cacao nibs
1 tsp flax meal
1 1/2 Tbsp maple syrup
2/3 – 3/4 cup of your favourite nuts (we used cashews, pecans, and walnuts)
In a coffee grinder, grind coffee beans and cacao nibs until finely ground. If you don’t own a coffee grinder, finely ground packaged coffee and cacao powder or whole nibs will work. Mix coffee, cacao, flax meal, and maple syrup in a medium bowl. Add nuts and mix well, ensuring to coat all nuts completely. For a sweeter flavoured snack, use fewer nuts (2/3 cup), or for a milder flavour use more nuts which allows for a lighter coating (3/4 cup +). Spread mixture on parchment lined baking sheet. Bake at 325 degrees F for 5-7 minutes. Be very careful NOT to burn the nuts! If necessary, check every 2 minutes. Allow ample time to cool and harden. For best results enjoy the next day.
