Summer is on its way! And with a change of season comes a change in our eating habits. That’s right the wifeys are going vegetarian. We are aspiring vegans but taking this one step at a time. This change has forced us to rethink our staple meals and be creative again. We were recently invited to a BBQ and knew we had to come up with a tasty vegan summer dish that meat eaters would approve of. And so began our love affair with this colourful bean salad. It tastes so much like guacamole I can’t wait to try it on a tortilla chip. Refreshing and light it is sure to be a bit at your next BBQ.
So we aren’t sure if you guys can tell yet, but…we love breakfast! Seriously, it’s one of the best meals of the day. There is nothing like sleeping in a bit in the morning, whipping up an easy yet delicious breakfast, and enjoying it over a fresh press of coffee. Yum! Now what if I told you those waffles that you have longed for since you started eating clean could actually be good for you? Bonus!
Fall is almost here, and that means back to school, comfy sweaters, and cold floors in the morning making it hard to get out of bed. Our solution has been overnight oats. Healthy, decadent, and ready to eat in the morning, overnight oats are a healthy way to start the day right. And by start the day right, I mean start the day by eating breakfast in bed. Seriously, we live in a basement apartment so it is quite chilly in the morning, and I’m not much of a morning person to begin with. Since we’ve started making overnight oats regularly, one of us just sneaks to the kitchen, grabs the jars and some spoons, and dives back under the covers. Et voila! Breakfast is served. Guess what!? Earlier this summer, we discovered the Wychwood Barns farmer’s market pretty close to where we live! And by pretty close, I mean it’s a two kilometer walk up a giant hill. But that isn’t really so bad! And best of all, we have been able to find tons of delicious and fresh produce to use in some exciting new recipes! I have been wanting to try out a latke type of recipe for a while now, and finally decided to try making a zucchini fritter! Most latkes are potato-based, so to try to make it a bit healthier we substituted green zucchini instead. As zucchinis have quite a bit more water than potatoes, it is important that you drain the zucchini of as much excess water as possible to give the batter a thicker texture so it cooks properly. Also, instead of using white flour in the batter, we decided on grinding some oats in our coffee grinder to increase the nutritional value a touch. The resulting fritters have a wonderful, warm, and savoury flavour, with a crisp outside and soft inside. Let us know what you think of them! Continue reading
While we usually stick with lean cuts of meat (such as boneless skinless chicken breasts) in our recipes, we decided to switch things up a bit this week. The rosemary adds a nice savoury dimension to the chicken, while the lemon juice lightens up the flavour of the dish! Placing the lemon wedges underneath the chicken breasts during cooking allows the citrus to cook up into the meat, and in concert with the bone and skin keeps the meat wonderfully moist! Spring is finally here! Or at least what we Canadians call spring…alternating light snow and rain, interspersed by hot and muggy days to give you that nice first sunburn of the season. Huzzah! It is about this time of year that we rejoice, as the produce sections of our local markets begin to stock more and more fresh vegetables that have looked more than a little wilted all winter. What better way to celebrate than to try out a new recipe using deliciously fresh veggies! Yum!

Okay, okay, we know what you are thinking…these girls have turned into super hippies that make their own laundry detergent now! Well, you are partly right. While we haven’t gone full-fledged hippy, making our own detergent has been something we have wanted to try for a while now, if only just to see how well it works and how difficult it is.
